Tortilla Soup

This Soup has so much flavor and the toppings add texture that is the Bomb!

Ingredients

  • ¼ cup oil
  • 1 onion
  • 1 garlic clove pressed or minced
  • 4 Roma tomatoes seeded and chopped
  • 4 oz can diced green chilies
  • 10 oz Rotel tomatoes with green chilies
  • 49 oz Chicken Broth
  • ½ tsp Cumin
  • Salt and Pepper to taste
  • 1 Chicken breast cut in bite-size pieces
  • Corn Tortillas 1 cup of oil to fry the strips if you don't own a fryer

Instructions

  • Saute' tomatoes, onion, garlic, green chilies until onion is transparent.
  • Add can of Rotel tomatoes and chicken broth.
  • Add Salt and Pepper, Cumin. Bring mixture to a boil. Then add the chicken. Once Chicken is cooked through lower heat and simmer approximately 15 minutes.
  • Cut the tortillas into strips and fry in the fryer or in a pan with 1 cup of hot oil.
  • Soup Toppings: Avocado, cheese, lime juice, green onions, cilantro, sliced jalapeños
