Tortilla Soup
This Soup has so much flavor and the toppings add texture that is the Bomb!

- ¼ cup oil
- 1 onion
- 1 garlic clove pressed or minced
- 4 Roma tomatoes seeded and chopped
- 4 oz can diced green chilies
- 10 oz Rotel tomatoes with green chilies
- 49 oz Chicken Broth
- ½ tsp Cumin
- Salt and Pepper to taste
- 1 Chicken breast cut in bite-size pieces
- Corn Tortillas 1 cup of oil to fry the strips if you don't own a fryer
Saute' tomatoes, onion, garlic, green chilies until onion is transparent.
Add can of Rotel tomatoes and chicken broth.
Add Salt and Pepper, Cumin. Bring mixture to a boil. Then add the chicken. Once Chicken is cooked through lower heat and simmer approximately 15 minutes.
Cut the tortillas into strips and fry in the fryer or in a pan with 1 cup of hot oil.
Soup Toppings: Avocado, cheese, lime juice, green onions, cilantro, sliced jalapeños
