White Chicken Chili

This chili is quick, easy and so yummy! It's comfort food at its finest!

Ingredients

  • 1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes I just use one breast
  • 1 medium onion, chopped
  • teaspoon garlic powder
  • 1 tablespoon canola oil
  • 2 cans great northern beans, rinsed and drained (15-1/2 ounces each)
  • 1 can chicken broth (14-1/2 ounces)
  • 2 cans chopped green chiles (4 ounces each)
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon pepper
  • ¼ teaspoon cayenne pepper
  • 1 cup sour cream
  • ½ cup heavy whipping cream
  • Tortilla chips optional (I deep fry my own tortilla strips)
  • Sliced seeded jalapeno pepper optional
  • Avocados diced

Instructions

  • In a large saucepan, saute' the chicken, onion and garlic powder in oil until chicken is no longer pink. Add the beans, broth, chiles and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes.
  • Remove from the heat; stir in sour cream and cream. If desired, top with tortilla chips, cheese and jalapeños and avocado.

Notes

I don't always cook the chili for the full time (40 min) and it still works out great!
