Chicken Salad Sandwiches

This recipe is very basic but the simple flavors are so delicious. It's a great dinner for summer time or a quick meal on the go.

Ingredients

  • ¾ cup mayonnaise
  • 2 cups stocks celery, chopped
  • 2 cups purple grapes, cut in half you can use less or more
  • 1-2 green onions, chopped
  • 1-2 boneless, skinless chicken breasts; cooked and cut into bitesized pieces or shredded or use an inexpensive rotisserie chicken, get the meat off and shred it.
  • chopped toasted walnuts, optional
  • Bread, Croissants, or rolls

Instructions

  • Cook the chicken ahead of time. (you can boil it but I like to do a quick braise and then bake it on the oven.)
  • Mix all ingredients together in a large bowl.
