Fresh Blueberry Syrup

If you want to change up your pancake breakfast, this syrup will definitely spruce it up! This delicious syrup is also great to drizzle over cheesecake or ice cream!

Ingredients

  • ½ cup granulated sugar
  • ¼ cup water
  • 1 ½ cups blueberries, fresh or frozen (you can also do 2 8oz packs)
  • 2 tsp Arrowroot (or sub cornstarch)
  • 2 Tbsp water

Instructions

  • Place the sugar in a pan with the ¼ cup of water over low heat and stir until the sugar has dissolved. Increase the heat, add the blueberries, cover, and cook for a few minutes or until they start to soften.
  • Remove from the heat. Mix the arrowroot or cornstarch with 2 Tbsp of water in a bowl or measuring cup. Add the mixture to the fruit, and stir until smooth. Return to low heat. Cook until the juice thickens and turns translucent.
  • Let it cool a bit. Chill until ready to serve or serve immediately, enjoy!
