Healthier Coconut Oatmeal Cookies

These healthier oatmeal cookies are great snacks for kids. They taste so yummy but have some health benefits that your regular oatmeal cookies do not have.

Ingredients

  • ½ Cup coconut oil (Member's Mark Organic Virgin Coconut Oil) or substitute butter
  • ½ Cup applesauce
  • ¾ Cup sugar
  • ½ Cup brown sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 tsp  salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 Cups flour (2 cups up to 2 1/2 cups if needed) you can also to half whole wheat flour
  • 2 Cups oatmeal1
  • ½ - 1 Cup coconut
  • 1 tsp almond extract (optional)

Instructions

  • Cream together butter, sugars, eggs and vanilla. Then add the coconut. Set aside.
  • Mix all dry ingredients together in a separate bowl.
  • Add dry ingredients to wet ingredients and mix well.
  • Spoon onto greased baking sheet. Bake at 350 for 8-10 minutes. ENJOY!
