PF Changs Lettuce Wraps [Copycat]

This is recipe is simple to make but the flavors are anything but simple. Definitely a party in your mouth! This meal has become a family favorite, especially during the summer months.

Ingredients

Chicken Mixture

  • 3 Tbsp oil
  • 1 lb Ground Chicken I usually use the Italian chicken sausage, see notes below
  • 8 oz can water chestnuts chopped
  • 4 oz mushrooms (white, straw, shitake or oyster) diced (I add more mushrooms than 4 oz)
  • cup diced onion (green onions if possible)
  • 1 clove garlic minced
  • 10-12 leaves Roman lettuce or iceberg

Special Sauce

  • cup sugar
  • ¼ cup warm water
  • 2 Tbsp soy Sauce
  • 2 Tbsp mirin or rice wine vinegar or white vinegar
  • ½ Tbsp lemon juice
  • tsp sesame oil
  • 2 tsp yellow or hot mustard or dijon
  • Tbsp Huy Fong chili garlic sauce add more if you want it more spicy!
  • 1 tsp water

Stir Fry Sauce

  • 2 Tbsp soy sauce
  • 2 Tbsp Worcestershire sauce
  • 2 Tbsp mirin or rice wine vinegar or white vinegar

Instructions

  • Make the special sauce-sugar sauce by dissolving sugar in water in a small bowl. Add the soy sauce, mirin, lemon juice, sesame oil, mustard, chili garlic sauce and water. (See notes below: you can also add ketchup to the sauce but I never do)
  • Whisk and refrigerate sauce until ready to serve
  • Bring oil to high heat in a skillet. Saute ground chicken 4-5 minutes. Break up the chicken into small pieces.
  • Add a bit more oil, water chestnuts, mushrooms and garlic to chicken
  • Prepare the stir fry sauce in a bowl by mixing the soy sauce, Worcestershire sauce and mirin 
  • Add stir fry sauce to the pan and saute mixture a couple of minutes. Remove the special sauce you set aside earlier and add a 2- 3 Tbsp of that sauce to the chicken mixture.
  • Transfer chicken mixture to a serving platter. 
  • Serve chicken mixture in lettuce leaves and spoon special sauce on top

Notes

*Let's talk meat. For some reason the Italian chicken sausage always goes on sale more often than just ground chicken and so I usually use the Italian ground chicken sausage and the flavors actually work. The oregano adds some depth to the overall flavor. 
**The Original Recipe suggests to make two sauces and then combine them but I just combine the sauces from the very beginning. 
Special Sauce --Sugar Sauce
    • 1/8 cup sugar
    • 1/4 cup warm water
    • 1 Tbsp soy sauce
    • 1 Tbsp mirin (or rice wine vinegar)
    • 1 Tbsp ketchup-  I don't use ketchup in mine
    • 1/2 Tbsp lemon juice
-Mustard Sauce
  • 1 tsp yellow or hot mustard
  • 1 Tbsp gochujang -I use Huy Fong
  • 1 tsp water
  • 1/8 tsp sesame oil
--Mustard Sauce
  • 1 tsp yellow or hot mustard
  • 1 Tbsp gochujang (or red thai chili paste)
  • 1 tsp water
