Roasted Chickpea Gyros
These pita sandwiches are so good and so easy. You can serve them vegetarian style or add a little bacon to "beef" them up!

- 2 15 oz can chickpeas (3 cup soaked chickpeas if starting from dry, drained and rinsed)
- 2 Tbsp olive oil
- 2 Tbsp paprika
- 1 tsp ground black pepper
- 1 cayenne pepper ½ tsp for less spice
- ¼ tsp salt
- 8 pita flatbreads
- 2 cups Tzatziki Sauce or just use mayo
- ½ red onion cut into strips
- 2 lettuce leaves roughly chopped
- 1 tomato sliced
- 1 lb Cooked Bacon optional
Preheat oven to 400 degrees F (204 C). Pat dry chickpeas with paper towel and remove any skins that may come off. Gently toss chickpeas with oil, paprika, black pepper, cayenne pepper, and salt.
Spread chickpeas onto a greased rimmed baking sheet. I grease a sheet of foil or use a teflon cooking mat instead of greasing the baking sheet. Roast for about 20 minutes, until lightly browned but not hard.
Spread some Tzatziki onto one side of the pita, then sprinkle in some of the chickpeas and add veggies. Fold in half and enjoy!
