Thrifty Light and Fluffy Waffles
Waffles are so delicious. I decided to create a recipe that is a bit more economical. My original recipe uses 8 eggs and this one uses 5 eggs.

- 5 Eggs Separated
- 2 cups all purpose flour
- 1 tsp baking powder
- 2 Tbsp butter or canola/ coconut oil coconut oil
- 1½ cup milk or water (2 cups if batter seems thick) I use almond to keep it dairy free, sometimes I'll use half water, half milk
- 1 tsp salt
- 2 Tbsp sugar
- 1 tsp vanilla
In a small bowl mix flour and salt, set aside.
Beat Egg whites until they form stiff peaks, set aside. Beat egg yolks on high speed until thick and turn to a lemon color.
Stir in melted butter/oil and vanilla.
Alternately add flour and milk to yolk mixture, beating well. Gently fold in egg whites . Cook in waffle iron until golden brown! Enjoy your waffle party!
