BBQ Pulled Pork Tacos

This meal is delicious and actually pretty inexpensive when you need to feed a crowd. Usually, we will smoke a large Pork butt or Shoulder that we find on sale and then we will freeze the leftovers is 1lb amounts. Usually, I will make this with meal with one of the bags of frozen leftovers.

Ingredients

  • 1 lb smoked pulled pork
  • 1 recipe of Memphis BBQ Shop Coleslaw
  • Corn tortillas
  • BBQ Sauce

Instructions

  • If using left over pulled pork, thaw and reheat the meat in a pan by adding water to the pan and covering it for a few minutes until meat is warmed. If you are using a fresh pork butt or shoulder, then either use a smoker, crockpot, oven, or instant pot to prepare the meat. The rub we use for our smoked pork butt/ shoulder is included in the notes below.
  • Next, prepare the coleslaw (this meal is also great if you have leftover coleslaw!)
  • Heat up your corn tortillas in a pan on the stove. Assemble your tacos by layering the meat, coleslaw and top it off with your favorite BBQ Sauce. Enjoy!
