BBQ Pulled Pork Tacos

I love BBQ pulled pork tacos. I actually prefer them over pulled pork sandwiches. Hear me out before you call me crazy. To expound, the meat to bread ratio is spot on for tacos. Sometimes, the bun or roll can overpower the pulled pork and coleslaw. However, if you’re eating pulled pork tacos, the thin corn tortilla is the side-note and the meat and coleslaw shine, like the star that they are! Allow me to explain further, just why I love this meal so much.

BBQ Pork Tacos can be pretty inexpensive

A few weeks ago, I saw this massive pork shoulder for $1.29 a pound during one of my epic grocery hauls. That is a really great deal! I knew I had to get it and I knew I wanted my hubby to smoke it. He is really good at smoking meat, probably because he’s so “smokin’ hot!” Sorry I couldn’t resist.

Alright, I digress, back to the “BBQ pulled pork Tacos are inexpensive” discussion. So, I purchased the package which contained 2 pork shoulders. Next, the hubs smoked the meat, we ate some for dinner that night and then we froze the rest into pound sized packages. When you do this it’s extremely affordable. So far, I have made 3 meals out of the pork shoulders and have 2 more bags of pork in the freezer. Not to mention, on that first night we had a family over to dinner and so we used even more pulled pork than usual. Even so, we still get five meals out of two pork shoulders.

BBQ Pulled Pork Tacos can Feed a Crowd

Years ago we attended a family reunion at a cabin and each family was responsible for a dinner during our stay. We had to feed 16 adults and around 20 kids. That’s a lot of peeps! We needed something convenient and inexpensive. Naturally, we turned to this recipe, Pulled Pork Tacos. We smoked the meat prior to arriving at the cabin and simply reheated it, then we made the coleslaw. Not only, was it absolutely delicious but the meal fed everyone and we actually had quite a few leftovers. A little amount of meat can go a long way if you do pulled pork tacos.

BBQ Pulled Pork Tacos can be Quick and Easy Meal night

This week I made BBQ Tacos from leftovers! When I planned my meals for the week, I knew that I had to bring a side dish to the family gathering on Memorial Day and so I decided to bring Coleslaw. Our coleslaw is awesome but we usually have plenty left over for another meal. All I had to do to make dinner was grab the frozen bag of pulled pork from the freezer, reheat the meat, toast some tortillas and bam, you are done!

Slow cooker Version to Make Pulled Pork

I typically, season the pork with a rub my husband makes for ribs (coming soon) and just braise the pork on all sides. Then, I place the pork in the slow cooker and cook on low for 8 hours until very tender. I add 1/4 to 1/2 cup of water to the meat to keep it nice and moist. It’s still delicious but I do miss the smokey flavor when I use the crock pot. Here is the recipe I used as inspiration.

BBQ Pulled Pork Tacos

This meal is delicious and actually pretty inexpensive when you need to feed a crowd. Usually, we will smoke a large Pork butt or Shoulder that we find on sale and then we will freeze the leftovers is 1lb amounts. Usually, I will make this with meal with one of the bags of frozen leftovers.

Ingredients

  • 1 lb smoked pulled pork
  • 1 recipe of Memphis BBQ Shop Coleslaw
  • Corn tortillas
  • BBQ Sauce

Instructions

  • If using left over pulled pork, thaw and reheat the meat in a pan by adding water to the pan and covering it for a few minutes until meat is warmed. If you are using a fresh pork butt or shoulder, then either use a smoker, crockpot, oven, or instant pot to prepare the meat. The rub we use for our smoked pork butt/ shoulder is included in the notes below.
  • Next, prepare the coleslaw (this meal is also great if you have leftover coleslaw!)
  • Heat up your corn tortillas in a pan on the stove. Assemble your tacos by layering the meat, coleslaw and top it off with your favorite BBQ Sauce. Enjoy!
