Easy 30 Minute Chicken Noodle Soup

Chicken Noodle Soup warms the soul and it’s so quick, easy and cheap. For instance, you can whip up this soup in just 30 minutes but it still is nutritious and filling. So, if your in need of a last minute meal, here you go peeps! I got your back.

A Great “Go-to” Recipe

When I’m planning dinner during the colder months, soup is definitely a popular menu item. Chicken Noodle Soup makes you feel all warm and cozy inside. Not to mention, it’s very economical. Yay! I usually use a box of Chicken Broth that I get for less than $2.00 a box. I’ll add 1 to 2 cups of water and 2 bullion cubes to get more broth. I try to get chicken for less than $1.99 per pound. The Chicken Broth and the Chicken are the most expensive ingredients in this meal. If a meal is cheap, simple and fast, then it is inducted into my treasured “Go-to” dinner recipes!

The Basic Ingredients:

One thing I love about this soup, is that the flavor is pure and simple. That means, you can be creative and add your own flare to it. My hubby and I like to add crushed red pepper flakes in his soup. You can add more veggies, or more seasoning. I also, feel it’s nice to accompany this soup with corn bread, rolls, or fresh homemade wheat bread.

Boil Broth and Cubed Chicken.

Then, add cooked Noodles.

Easy as pie… except that it’s soup. And pie isn’t super easy… pie crusts can be pretty finicky. (Check out my post on pie crust!) Ok, who came up with that saying? Anyway, this recipe is as easy as… soup.

Greatest Knife Ever!

This knife is pricey but if it’s in your budget, its a great purchase. Since buying this knife, I hardly use my other knives. It slices and dices like a dream. We used our Ibotta (I’ll tell you about this app soon) cash to buy this knife off amazon and it has been great to have a sharp knife that cuts so easily!

My Quick and Easy Chicken Noodle Soup Recipe

Chicken Noodle Soup

Cook Time30 minutes
Course: Main Course
Servings: 5

Ingredients

  • 2 TBSP Olive Oil
  • 1 Onion diced
  • 1 Clove Garlic
  • 2 Carrots chopped
  • 2 stalks Celery chopped
  • 1 lb Chicken cut into bite size pieces
  • 32 oz Chicken Broth
  • 2 Bay leaves
  • 1 Tsp Dried Oregano
  • 1 Cup Water optional
  • 1 Bullion Cube optional
  • Salt and Pepper to Taste
  • 1-2 Cups Egg Noodles

Instructions

  • 1. Chop your Onion, Carrots, Celery, and Garlic.
  • 2. Heat oil in your pot. First, Saute' your onions until they become fragrant and then add the carrots, celery, and garlic. Cook for 3 minutes or so.
  • 3. Add the Chicken broth, Bay leaf, Oregano and Salt and Pepper. If you would like more broth, add a Cup of water and a Bullion cube. Bring the mixture to a boil.
  • 4. Grab another pot and begin to cook your Egg Noodles.
  • 5. Meanwhile, chop your chicken. Once the soup is boiling, add the raw chicken. Let the soup boil until the chicken is white and completely cooked through and then cover and simmer.
  • 6. Drain your cooked Egg noodles and then add them to the soup. Done and Done!

Notes

If you want to stretch this recipe to feed more people, you can always add more water and bullion cubes if you have them on hand!
