Banana Bread

I don’t often buy a lot of ready-made snacks because they can break the bank. Banana bread is a good snack to take to school, to eat after school or just eat any time. It’s so yummy! I also like that I can gage how much sugar I put in the bread. So many processed foods add more sugar than necessary and the sugar can overpower the flavor (and that’s coming from a lady who loves dessert!). Usually, (when we aren’t in quarantine) I’ll whip up some bread the night before and send it with my kiddos to school. I do buy chips or crackers or even fruit leather every now and then, don’t worry I’m kind of normal. I don’t always have time but I try to find the time to make some snacks.

Dairy Free Banana Bread

For the longest time, I made this recipe with butter. I actually love butter but it became very clear to me that a few of my kiddos could not handle dairy. So, I made the tough decision, to take dairy out of my life and out of my heart forever (you’ve gotta love the drama). I started altering my recipes to accommodate the dairy free peeps in my family. I also, came to realize that I really do much better without Dairy and so I try to limit it. Thus, I love this recipe because it doesn’t have butter or milk in it and yet it’s still super moist and tasty.

Super Simple Banana Bread

This recipe is so easy! It comes together so fast and tastes delicious!

Servings: 1 loaf

Ingredients

  • 3 bananas
  • Cup canola oil or ⅓ Cup melted Butter
  • ½- 1 Cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 tsp baking soda
  • pinch salt
  • 1-½ Cups flour

Instructions

  • Preheat oven to 350°.
  • Mash the bananas.
  • In a bowl, mix all ingredients by hand or in your mixer until well incorporated.
  • Pour into a greased bread pan (approx 9x4x4)
  • Bake 50 minutes to 1 hour or until browned and a toothpick inserted in middle comes out clean.
  • Cool on rack
