The Best Potato Salad

Don’t you love that all your senses are awakened to the fact that the season is about to change. I love Summer. I guess you could say I’m a lover of all seasons, but I digress. Back to Summer time! Summer feels warmer and the landscape is a little brighter. One of my favorite sounds of the summer season, is the faint humming of lawn mowers cutting the grass. Most importantly, our noses get the unmistakable sign that summer has commenced. Namely, we are inundated with the smell of neighbors grilling for dinner.

Can you Bring a Side Dish?

Summer season is Barbecue season! Often, we gather as friends and family for a summer Barbecue and we are asked to bring a side dish. Sometimes it can be difficult to decide what to bring. In the first years of our marriage I brought some strange things as a side dish or I would stick to dessert. Now, as I have matured in my years and wisdom, I have a few recipes that immediately come to mind.

Yes, it’s true, you can buy potato salad at the store but I advise against it. First of all, it can be a little pricey for what you get. I have seen too many containers of potato salad thrown in the trash. This injustice must stop! What I meant to say was, I don’t think too many people like it and so it typically goes to waste. To go along with that, the store-bought version is not exactly horrible tasting but when you’ve had fresh and delicious potato salad, it will get eaten. Try this recipe and I bet you’ll never go back to the store to pick some up.

I’m sharing a “Watt family favorite” recipe that we eat at almost every big family BBQ. I hope you enjoy this classic potato salad. I slightly altered the recipe by adding more eggs and sometimes I’ll add more celery. A few of my family members are probably shaking their head at me at this very moment, “How dare you alter a perfect recipe?” Well, I guess I just can’t help myself. Simple Flavors and Freshness

This salad has very basic ingredients and flavors. I love that this salad really can go with anything because the flavor doesn’t overpower the fresh ingredients. Also, this recipe is not complicated which is a win, win for those of us who don’t wish to spend hours making a salad.

Now this Salad is Really the Best

Dusting the top of your potato salad with glorious cayenne pepper kicks this classic potato salad up a notch. To what notch am I referring? The “delicious factor” notch. Cayenne pepper is one of my top favorite spices and adding it, of course, could be biased but I really think it completes the salad.

The Best Potato Salad

Ingredients

  • 2 lbs. potatoes (5 to 6 medium) peeled and cut into 3/4-inch chunks
  • 1 cup Hellmann's® or Best Foods® Real Mayonnaise
  • 2 Tbsp vinegar
  • tsp salt
  • 1 tsp sugar
  • ¼ tsp ground black pepper
  • 1 cup thinly sliced celery
  • ½ cup chopped onion
  • 4 hard-cooked eggs chopped
  • cayenne Pepper Optional, but you really should do it!
  • more salt and pepper to taste

Instructions

  • Cover potatoes with water in 4-quart saucepot; bring to a boil over medium-high heat. Reduce heat to low and simmer until potatoes are tender, about 10 minutes. Drain and cool slightly.
  • Combine Hellmann's® or Best Foods® Real Mayonnaise, vinegar, salt, sugar and pepper in large bowl. Add potatoes, celery, onion and eggs and toss gently. Serve chilled or at room temperature.

Notes

*Occasionally I will use Kraft Mayo because it’s a better price but Best Foods mayonnaise tastes the best!
*The original recipe asks for only 2 boiled eggs but I love eggs and so I doubled that. 
*I recently discovered that if you dust the top with cayenne pepper, it’s amazing! You need to try this RIGHT NOW!
