Fresh Strawberry Mango Pie

Pie can look so fancy and luxurious! But looks can be deceiving. Ingredients for most pie recipes are pretty inexpensive. Pie crust can be finicky to make but it’s so cheap, just shortening, salt and flour! This pie recipe falls into that category. As far as cost is concerned, this pie takes the cake (I couldn’t resist that pun). However, “Fresh Strawberry Mango Pie” can be expensive if you don’t get the produce on sale.

Strawberries: under $1.00 per pound

Mangos: under a $1.00 each

Fresh Strawberry Mango Pie

Fresh Strawberry Pie is a great Summer Pie! It's so refreshing and beautiful!

Ingredients

  • 3 Cups  strawberries
  • 1 Cup Mango
  • Cups water
  • ¾ Cup sugar
  • 2 Tbsp cornstarch
  • oz package strawberry jello
  • Freshly whipped cream
  • 1 prepared pie crust (see pie crust recipe on my blog)

Instructions

  • Cut stems off strawberries and leave whole or at least in large pieces. Place in pie shell.
  • Combine water, sugar and cornstarch and cook over medium heat, stirring constantly until it comes to a boil. Continue on low heat for 2 minutes until it thickens and is clear.
  • Add jello to mixture. Stir and pour, while hot, evenly over strawberries. Chill until set.
  • Serve with freshly whipped cream

Notes

This recipe was adapted from a “fresh strawberry pie” but I didn’t have enough Strawberries and so I added the mango. Be creative! 

Food Inspiration

I love to experiment with food. As a result, I frequently change up recipes. I was inspired to add mangos to this recipe because of my kids. They were little stinkers and ate too many of the strawberries. As a result, I didn’t have quite enough for the pie. But it all worked out. I love “Becki’s Whole Life” Fresh Strawberry Pie recipe.
