Perfectly Chewy Chocolate Chip Cookies

chocolate chip cookies

Chewy Chocolate Chip cookies are the best! Nothing beats a tall glass of milk and a plate of chocolate chip cookies! Some people may vouch for the crunchy cookie but I’m a chewy cookie girl all the way! These cookies are incredibly delicious. So, bake at your own risk because you may not be able to stop eating them!

Chewy Dairy Free Chocolate Chip Cookies

Making a deliciously chewy dairy free chocolate chip cookie is like pairing all your socks together after you wash them: pretty much impossible. Alright, it’s not completely impossible but butter is amazing and it’s difficult to compete with butter. However, my secret weapon is coconut oil and you can substitute coconut oil for butter in most recipes. Nevertheless, there are certain recipes that are difficult to replicate. The chewy chocolate chip cookie is one of them. Have no fear I have found a solution! Simply, combine canola oil or dairy free butter with the coconut oil and you shall achieve that delicious soft and chewy texture. A texture that every top notch chocolate chip cookie deserves. The last step to create the perfect dairy free chocolate chip cookie is to choose your chocolate wisely. Simply, pick a dark chocolate chip that contains no milk and you are good to go! Of course, this recipe works wonderfully with butter and so you can just forgo all this nonsense if you wish!

Products I love!

So far, this brand of chocolate chips are the most budget friendly for dairy free. However, we aren’t deathly allergic to milk, we just have an intolerance. Thus, I will occasionally use dark chocolate with small amounts of milk. The white chocolate chips are also so incredibly yummy (not dairy free though). Click the images below to purchase!

Ingredients

  • ½ Cup Coconut oil or unsalted butter, softened
  • ¼ Cup canola oil or unsalted butter, softened
  • ¾ Cup brown sugar
  • ¼ Cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 Cup all purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 Cup bittersweet chocolate chips or white chocolate chips or M&Ms or do a combination

Instructions

  • Preheat oven to 350 degrees F.
  • In the bowl of a stand mixer fitted with a paddle attachment, cream together butter and sugars until fluffy and light in color. Add egg and vanilla and blend in.
  • Mix in flour, cornstarch, baking soda and salt. Stir in chocolate chunks.
  • Using a standard-sized cookie scoop or tablespoon, drop dough onto a prepared baking sheet.  Bake for 8-10 minutes, until barely golden brown around the edges.  (The tops will not brown, but do NOT cook longer than ten minutes.)
  • Let cool, on the sheet, on a wire rack for five minutes.  Remove from baking sheet and let cool completely.  Makes approximately 3 dozen.  Try not to eat them all.

Notes

*If you want to make these completely dairy-free, use dairy free chocolate chips.
