I love Oatmeal Cookies! When we found out that a few of our kiddos needed to avoid dairy, I became a mom on a mission, to find the best dairy free oatmeal cookie recipe out there. It’s as if I was a real life Frodo Baggins traversing the unknown terrain of Pinterest, scowering hills and mountains of recipes. When I found this recipe, it was as if I found the ring. I found my precious. Okay, I was more like Gollum, stroking the ring because these cookies are really that good. And I don’t know why I’m comparing this experience to Lord of the Rings. I’m definitely not an expert, but it’s the first thing that popped into my head. Just jumped feet first into this metaphor!

Do They have to be Dairy Free?

Alright, I have experimented with many recipes and I have found that you can almost interchange butter and and coconut oil and get great results. Now, this isn’t true with everything but with cookies, it has been true. So, I’d say that you can go ahead and substitute butter for this recipe and they should work out really well. However, I haven’t tried butter with this particular recipe. Please, comment below and let me know how it works out.

Chocolate Chips

Also, I try to use dairy free chocolate chips for these oatmeal cookies but they can be so pricey. Often times, I will do half the recipe completely dairy free and then I will mix in regular chocolate chips into the remainder of the dough. This helps me stretch those expensive dairy free chocolate chips. On the flips side, I occasionally use raisins or dried cranberries instead of chocolate and it’s super yummy.

If you look at the ingredients, you’ll notice these cookies aren’t lacking in the sugar department. Which probably explains why they are so good and so addicting! Sometimes, when my kids are ready for a snack, I’ll give them cookies (that a bit more on the healthier side). I have an oatmeal cookie recipe that has reduced amounts of fat and sugar. The texture is different but my family loves them!

The Best Dairy Free Oatmeal Cookies

These cookies are so good pretty addicting. The Hint of coconut is amazing! You will have a hard time just eating one. You can make them completely dairy free by using dairy free chocolate chips or use whatever kind of chocolate you wish!
Servings: 5 Dozen

Ingredients

  • ¾ cup brown sugar or 1 cup
  • ¾ cup granulated sugar or 1 cup
  • 1 cup extra-virgin coconut oil softened slightly but not melted
  • 3 large eggs
  • 1 tsp vanilla
  • cups white whole wheat flour or all purpose flour (11.5 ounces)
  • tsp baking soda
  • 1 tsp salt
  • 2 cups old-fashioned oats
  • 12 ounces semi-sweet chocolate chips (I'll use either dairy free and regular depending on who is eating them)

Optional Ingredients

  • white Chocolate Chips
  • craisins (great dairy free option)
  • chopped Walnuts

Instructions

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper, tin foil or a silicone baking mat.
  • In a large bowl, cream together the brown sugar, granulated sugar and coconut oil until light in color, 1-2 minutes. Add the eggs and vanilla and beat the mixture for 2-3 minutes. Stir in the flour, baking soda, salt, and oats until just combined.
  • Stir in the chocolate chips until combined. Scoop about a heaping tablespoon of dough. (you can roll it or just plop is on). Place them 1-2 inches apart on the prepared baking sheet.
  • Bake for 9-10 minutes until the edges are lightly golden and set but the middles are still soft. Remove from oven and let the cookies sit for 2-3 minutes on the baking sheets. Then use a spatula to move the cookies to a cooling rack to cool completely.

Notes

*If you don’t need the cookies to be dairy-free, you can use whatever type of chocolate chips you desire.
