Finding chewy Brownie recipes made from scratch and dairy free, that taste yummy, can be hard to come by. I have tried countless recipes and found some that tasted ok but the texture was way off. To be Frank, they all kind of sucked! Then, I found this recipe on Pinterest and I decided to give it a go. As I pulled the brownies out of the oven it’s as if concourses of angles were Echoing the chorus of Hallelujah! I found the holy grail of Dairy Free Brownies!

What is more cost Effective, A Box or made from Scratch?

I always go back to dollars and cents because due to my debt-free journey, I’m always trying to budget my money and time. Did you pause and ask why I would throw time in there? Our time is definitely worth something! Usually, I’m undervaluing my time and so I have to reevaluate my time budget frequently. I make many things from scratch which has so many benefits but it takes a lot of time.

Brownies: Time Versus Money

So, are the boxed brownies cheaper than brownies made from scratch. When the Duncan Hines brownie mixes are less than a dollar, I will buy those because they are more convenient and about the same price as the scratch version. But over all, you save some money when you make from scratch. Especially, if you’re buying mixes at regular price.

I broke down the cost and provided an estimate for you. Making brownies from scratch is cheaper but you have to consider the time cost. These brownies are more involved and take more time. Nevertheless, I love the taste of homemade baked goods and that I get to control what goes into my food. Thus, I will mostly make this recipe but if there is a sale, I will definitely purchase a few brownie mixes. Ladies and Gentlemen of the jury, this decision is a toss up! If you get the brownie box on sale, the difference in price is only a matter of cents. Now, go be free and make brownies till your heart’s content!

Chewy Brownies

Brownies are so amazing! We mostly eat dairy free and this recipe is delicious even without all the dairy goodness!

Ingredients

  • ¾ cup refined coconut oil or canola oil
  • ¾ cup granulated sugar
  • ½ cup brown sugar
  • 1 tsp vanilla extract
  • 2 2 large eggs + 1 yolk Lazy Tip: just add all 3 eggs
  • cup cocoa powder, sifted
  • ½ cup all-purpose flour 
  • ½ tsp salt or coarse sea salt
  • ¼ tsp baking powder 
  • ½ cup chocolate chips

Instructions

  • Preheat oven to 350 degrees. Line a 8×8-inch or 8×11 glass or metal baking pan with parchment paper, set aside. In the bowl of a stand mixer fitted with the paddle attachment or a large mixing bowl (using a hand held mixer), add the oil, sugars and vanilla. Mix on medium speed until combined, about 1 minute.
  • This next step is key! Add the eggs and yolk one at a time, mixing after each addition, then mix for 30 seconds. Let the mixture rest for 3 minutes, the repeat by mixing for 30 seconds. Repeat two more times.
  • In a medium mixing bowl whisk together the cocoa powder, flour, salt, and baking powder. Slowly add the dry ingredients and chocolate chips and continue mixing for 30 seconds until all the white streaks are gone.
  • Pour the batter into the prepared pan and place in the oven to bake for 25-35 minutes or until a toothpick inserted into the center comes out with a few moist crumbs. Remove from the oven and allow to cool in the pan for 30 minutes. Slicing, serve and enjoy!
